It says on the Wiki for The Seven Deadly Sins that she is 3000+ chronologically and 30 appearance wise. If she is not an adult and is actually a child then I don't want to read the series anymore. :[

I mean when she met meliodas she was still a child. But she is 3000+ years old. She can just shapeshifter herself back into her child form but Technically she is an adult
I don't think it's that easy. In fiction, different species can age at slower rates. Demons are a known case.
I don't understand your question. Merlin is a human that is 3k+ years old. Her mind is old af so she definitely isn't a child in a grown body. She did stop the aging of her body but that doesn't mean she didn't grow mentally. She didn't stay with the mind of an 8 year old (or however old she was). She can change her body to look whatever age she wants with magic and she doesn't age naturally because she stopped her time with magic.
And Android 21 was made using an adult woman as a template. She therefore had an adult brain. Even if she was 10 years old she was in no way a child who needed her parents to take care of her. She wasn't human. She was an artificial life (which is different from 18 and 17 who are modified humans).
Not really, cos if I dont remember wrong, 3000+ is a life expectency that not even demons have, so cases like Meliodas or in this case, Merlin, are actually weird

They literally said in the most recent chapter that she is human but she's been able to live so long because she cast a spell to not age. It's not that hard to comprehend.
