    you see mikos are something like a divine priestesses in shrines (shinto shrines to be exact in japanese culture), but in here the miko is a sacrifice for the god who brings prosperity and wealth to the land. if you understood the part where the "god fell in love with a human and that the devil was envious of them and tried to break their relationship by sending fiends", you'll realize that souma is already wedded to the god for he is already the miko, but then atsushi came to take him away and defiled his purity which showed that atsushi was the "devil" of this story who broke the wedding between the god and the miko. while for everyone who are turning into fiends, since the miko's purity has been defiled, then the god has no more reason to aid the land, unless they appoint a new miko to be wedded to the god but they should have done that before the miko was taken by atsushi in which they didn't. my theory to this is that the miko is not only a sacrifice to the god but also a vessel to ward off people from turning into fiends, it was mentioned in the medical report that souma read in his father's archives that human population was in decline which is probably because people turn into fiends and those who didn't turn are killed by fiends, so it makes sense that the mikos who were wedded to the god are vessels that prevent them from turning into fiends. well that's my take, i hope i didn't cause more confusion from trying to give you an explanation.
